Potentiale eines Buffetwagensystems für die Nachhaltigkeit beim Speisentransport in Alten- und Pflegeeinrichtungen

Das Potential der Gemeinschaftsverpflegung für eine nachhaltige Entwicklung, auch in Alten- und Pflegeeinrichtungen, ist bereits in verschiedenen Studien her­ausgearbeitet. Dabei wird jedoch selten der Speisentransport auf die Wohnberei­che in diesen Einrichtungen untersucht. In einem Pilotprojekt in einer Alten- und Pflegeeinrichtung wird der Speisentransport von der Großküche auf die Wohnbe­reiche von einem herkömmlichen Speisentransport auf ein Buffetwagensystem umgestellt. Dabei zeigen sich positive Auswirkungen auf allen drei Dimensionen der Nachhaltigkeit, sowohl ökologische, ökonomische und soziale Aspekte. Anhand eines Service Blueprints und der Potential-, Prozess- und Ergebnisdimension der Dienstleistungen werden diese Potentiale analysiert und diskutiert.

Potential of a buffet trolley system for sustainability in food transport in retirement and nursing homes

The potential of communal catering to contribute to sustainable development, in­cluding in residential and nursing care facilities, has been highlighted in various studies. However, the transport of meals to the residential units in such facilities is rarely examined. In a pilot project conducted in a residential and nursing care facility, the meal transport system from the central kitchen to the residential units has been converted from a conventional transport system to a buffet trolley sys­tem. The results show positive effects across all three dimensions of sustainability, including ecological, economic, and social aspects. Using a service blueprint and the potential-, process-, and outcome dimensions of services, these potentials are analysed and discussed.
