Ökobilanzierung einer Kita-Verpflegung anhand des Beispielgerichtes „Marokkanische Hähnchenpfanne“

In der vorliegenden Ökobilanz werden die Umweltwirkungen des gesamten Lebenswegs des Gerichtes „Marokkanische Hähnchenpfanne“, das als Beispielgericht für eine Kita-Verpflegung dient, betrachtet. Das Gericht wird im Baukastensystem aus drei Hauptkomponenten und zwei weiteren handelsüblichen Zutaten in der Kita zubereitet. Die Ableitung ökologisch relevanter Lebenszyklusphasen und Verbesserungsmaßnahmen stehen im Fokus. Insbesondere die Phase „Urproduktion der Rohwaren“ hat einen hohen Anteil an den Umweltwirkungen.

Life cycle assessment of a day-care centre catering based on the example dish “Moroccan chicken pan”
In this life cycle assessment, the environmental impacts of the entire life cycle of the dish „Moroccan Chicken Pan“, which functions as a sample dish for a day-care centre catering, are examined. The dish is prepared in the day-care centre in a modular system out of three main components and two commercially available ingredients. The focus is on the identification of ecologically relevant life cycle phases and improvement measures. In particular, the phase „primary production of raw materials“ has a high share in the environmental impacts.
